The PDR takeover series is in partnership with the team from Messer Fitzroy, as we take over the restaurant for a special dinner every Monday night. We have handpicked some amazing talent from around the country to collaborate on these special evenings.

Each Monday will feature a 5 course menu with paired beverage, designed by a different savoury chef, pastry chef and sommelier. With an aim to promote collaboration and stimulate creativity within our industry, we are very excited to see which each team creates!


Paul Farag (Fish Butchery, NSW)
Having worked in some some of NSW's finest restaurants, including Head Chef of Monopole- Paul Farag is now "captain of the ship" at Australia's first seafood butcher, Fish Butchery in Sydney. Paul's approach to food is all about respecting the produce, using every part possible and working with sustainable, local fishers.

Gemma Calleja (Messer, VIC)
Gemma Calleja is head pastry chef at our August residence, Messer. Her passion for the sweeter things has taken her to some of the countries top restaurants including Quay, Cumulus and Tonka. Gemma's pastry is all about dynamic flavours that express each ingredient individually as well as part of the whole dish- and she tells us she has something very special in store for this dinner.

Brodie Comer (Yugen Wines, VIC)
Brodie Comer is an all-round wine wizard, having worked in sommelier roles previously at the like's of Stokehouse and Lumé. Her passion for the grape has seen her explore roles in wine distribution, which has taken her around the globe to taste and meet some of the wine worlds greatest minds. She currently is working on her joint wine label Yugen Wines, using local Victorian growers.
