The PDR takeover series is in partnership with the team from Messer Fitzroy, as we take over the restaurant for a special dinner every Monday night. We have handpicked some amazing talent from around the country to collaborate on these special evenings.

Each Monday will feature a 5 course menu with paired beverage, designed by a different savoury chef, pastry chef and sommelier. With an aim to promote collaboration and stimulate creativity within our industry, we are very excited to see which each team creates!

MONDAY 06 AUGUST

Chris Chilvers (Penny's Hill Winery, SA)
Chris Chilvers is Head Chef of The Kitchen Door restaurant at Penny's Hill Winery in McLaren Vale. His journey has seen him work at the likes of Adelaide's The Wine Underground and Momofuku Seibo Sydney.  He has a passion for American BBQ and spent a "gap-year" perfecting the art straight in the pit. "Provenance matters most... I only use produce I can trace back to it's source."

Kay-Lene Tan (Tonka/Coda, VIC)
Kay-Lene Tan is Head of Pastry for Tonka and Coda in Melbourne. Raised in Singapore, Kay-Lene imports an array of interestingly diverse flavours into her desserts- with an emphasis on the exotic. She has been nominated for numerous young chef awards and recently one the MFWF Host Plus Scholarship which will take her around the globe to perfect her art.

Tim O'Donnell (Private Dining Room/L'Hotel Gitan, VIC)
Tim O'Donnell is the founder of PDR and Head Sommelier at L'Hotel Gitan by the Reymond family. He has worked at some of Melbourne's top restaurants over a broad range of cuisines, giving him a wide grasp on local and international beverages.
