PDR is pleased to announce that this April we will hosting the husband and wife team of Matthew and Caitlyn Hammond. The duo have worked at some of Melbourne’s finest restaurants and will be bringing all this experience to bear as they serve up a scrumptious, one-off feast, accompanied by fine wine and fellow food lovers.
Currently the Head Chef at PS Bar and Kitchen, located on Melbourne’s iconic Southbank, Matthew’s résumé also includes notable venues like Woodland House, Elyros, Brooks of Melbourne and Press Club, a who’s who of some of the city’s finest fine dining establishments. Having started his apprenticeship as a teenager, Matthew does not consider his cooking style bound to any particular cuisine or ingredient, rather electing to innovate and experiment with his cooking, tweaking and fine tuning to create delicious masterpieces. And, clearly, his work has not gone unnoticed: he is a former finalist for both the Electrolux Young Chef of the Year (2016 and 2017), and the Gault & Millau Young Talent of the Year (2017), proving that his food has caught the attention of the culinary world.
Every great savoury chef needs a pastry chef to give a resounding, titillating and sweet conclusion to their dinner, and Caitlyn, with her extensive experience in pastry kitchens all over Melbourne, is certainly that to Matthew. With tenures at Epocha, Vue De Monde, Cecconi’s, Bistro Guillaume and The Press Club, it is obvious that Caitlyn is a pastry chef of exceptional skill. Having found a love of desserts baking muffins and cakes with her aunty as a child, Caitlyn was set on the patisserie path from a young age. Her adult cooking is inspired by her love of classical French desserts, which she attempts to shape and advance with modern technique.
Matthew and Caitlyn will be creating a 6 course PDR menu inspired by their mutual admiration of technique and excellent quality food. With matched beverages and that unique PDR atmosphere of hospitality and surprise, it will not be an event to be missed.
