PDR is excited to announce that for our June 13 dinner we will be manning the kitchen with one of Australia’s most exciting young chefs, Josh Gregory. Flying down from Newcastle for this one off event, Josh is sure to astound with a memorable six course menu.

After a working as sous chef at EXP. restaurant in the picturesque Oakvale Winery, Josh has recently ventured out on his own as Head Chef/Owner of Hunter Dining (opening soon), bringing a unique worldly experience to his cuisine. Starting small, he developed a love of cooking on his family’s Hunter Valley property, using produce sourced by their own hands. In 2012 he won the Brett Graham scholarship, which sent him around the globe, gathering experience at such pinnacles of the culinary world like Fäviken, Noma’s Nordic food lab, Osteria Francescana, Mugartiz, and finishing with a spell at The Ledbury in London. In Australia he has worked at the award-winning Biota under James Viles and was also a finalist in the Electrolux Appetite for Excellence and San Pellegrino Young Chef awards. Josh lives by the creed that ‘cooking for others is the greatest gift you can give,’ and brings this sense of simple, warm hospitality to his cooking.
